Dairy Free Chicken Casserole
My mother brought over a rotisserie chicken while I was recovering from surgery (whey-free- we check every time!). This meant we had a lot of leftover chicken. We can't use any boxed mixes or canned soups for casseroles due to allergies,
This dairy free chicken casserole was good, though it took a bit more work to make the dairy free white sauce. I added lots of peas and a package of mushrooms, browned ahead of time.
The big people and the little people both enjoyed this. If you can eat dairy, melted cheese on top would probably go well with this.
