Menu Plan Monday

Monday: Pork with Plum Sauce (we're using peaches), Salad with Julia Child's Vinagrette
Tuesday: Mustard Lime Chicken, Roasted Broccoli, Cucumber Slices

Wednesday: Costa Rican Gallo Pinto, Oven Roasted Cauliflower

Thursday: Perfect Eggs, Pumpkin Bars, Slow Cooker Potatoes and Onions

Friday: Gluten Free Meatloaf (veggie infused), Peas, Strawberries

Saturday: Roasted Brussels Sprouts with Bacon, Grilled Zucchini, Yellow Squash, and Onions

Lunches: Pumpkin Bars, Nuts, Salami/Pepperoni with Cheese, Salad, Fruit, Granola and fruit

Breakfasts: Oatmeal with Walnuts, Raisins, and Almond Milk or Green Monster Smoothie with added flax seed oil and chia seeds, or Frozen Blueberry, Blackberry, Strawberry, Banana, and Spinach Smoothies with added Chia Seeds


Homemade Goodies: Paleo Bread, Homemade Granola (we add nuts) with peaches,

I randomly found Gallo Pinto in our Street Foods cookbook and decided to make it this week as well. Have you made it before? It sounds super yummy!!
