Veggie Infused Meatloaf

Carrots, Spinach, Onion, and Garlic that have been sent through the food processor

Veggies mixed with local grass-fed beef. It's expensive, but mixing with veggies stretches it further.

Ready for the oven.

And ready for tomorrow's lunch leftovers!
Here's the inspiration I used for the above meatloaf- The Unrefined Kitchen's Meatloaf With Veggies. I added worcestershire sauce and a bit of ketchup to the mix before baking. You can probably use any veggies you want!

My picky 4 year old ate this and asked for seconds. My husband and I both loved it as well.
