Menu Plan Monday




Breakfasts: waffles for the kids, Green Monster Smoothies, and oatmeal with brown sugar, walnuts, and almond milk, or Berry Smoothies with frozen strawberries, blueberries, raspberries, banana, almond milk, flax seed oil, and hemp protein for me

Snacks: Homemade Soy Yogurt with fruit and homemade granola, Blueberry Yogurt Muffins (making with soy yogurt, whole wheat flour, and honey instead of sugar), Apple Sandwiches, Vegan Pumpkin Puree Cinnamon Rolls,

Dinners:

Sunday: Homemade Chicken Nuggets (without parm for us), Baked French Fries, Peas

Monday: Spring Pasta with Asparagus, Peas, and Tomato

Tuesday: Mushroom Risotto, Pan-Fried Brussels Sprouts

Wednesday: Grass-fed Beef Meatloaf with Veggies (I process garlic, onion, carrot, and zucchini), Kale Chips, Pineapple

Thursday: BLTs, Sweet Potatoes With Feta and Sumac, Broccoli

Friday: Bean and Bacon Soup, cook Navy beans in slow cooker ahead of time

Saturday: out with the girls
