Roasted Veggie Wraps
This Veggie Wrap turned out very, very well. Definitely on the regular rotation list again. I roasted some zucchini, summer squash, red onion, a minced garlic clove, and half a red and yellow bell pepper with a small drizzle of olive oil, pepper, and dried basil. I heated the tortilla in the microwave for 20 seconds to soften it, then put a couple ounces sharp cheddar down the center, loaded some veggies on, then a couple tablespoons of guacamole. I used pre-made guac this time, but will make my own next time. I also think I will try to find a lower calorie tortilla, or experiment with making my own. This was full of flavor!
