Menu Plan Monday
Sunday cooking: Chili in the slow cooker (my own recipe)
1 lb ground sirloin
half an onion, diced
1/4 green pepper, diced
1 can kidney beans, drained
one can fire-roasted tomatoes, undrained
2 cans salt-free diced tomatoes, undrained
1 6oz can mild chilies, diced
1 can tomato paste
garlic powder, black pepper, chili powder, Lawry's Seasoned Salt, and cumin to taste
Eat with crackers and shredded cheddar cheese, if you like.
Also making (frozen) butternut squash ravioli for son's day care meals, Dairy-free Blueberry Muffins, and vegetable broth in the slow cooker for this week's vegetable soup.
Monday: Pierogies with sauteed onions, green beans
Tuesday: Mushroom Risotto, Balsamic Brussels Sprouts, sliced tomatoes with feta
Wednesday: Beef Vegetable Soup in the slow cooker
Thursday: Spanish Rice and Beans, Peas
Friday: in-laws coming into town, Pot Roast with Potatoes, Onions, and Carrots in the slow cooker, salads
Saturday: out to dinner with family
Work lunches: leftover chili, veggie soup, and rice and beans; yogurt and salad daily
