Menu Plan Monday


Is today really Monday again? Lots of soup this week.

Monday: Homemade Falafel with Cucumber Dill Sauce, fresh red pepper and tomato
Tuesday: Onion Soup in the slow cooker
Wednesday: Corn and Potato Chowder with Bacon
Thursday: Tomato Basil Soup
Friday: Sweet Potato Burritos
Saturday: Homemade Calzones with turkey pepperoni, cheese, and onion
Sunday: Chicken Piccata, Roasted Dijon Potatoes

Day Care Snacks:
Almond Poppy Seed Muffins (taste fantastic!)
Apple Oatmeal Muffins (these were a HUGE hit with the toddler last week)

Menu Plan Monday


Need to use up this week: lots of shredded cheese, cream cheese, and eggs from recent deals.


Monday: Husband is making a Roasted Red Pepper Pasta from a 15-yr old grocery checkout cooking pamphlet.
Tuesday: Slow Cooker Vegetable Soup, using Paula Deen recipe (I'm omitting blackeyed peas and pasta)
Wednesday: Corn and Potato Chowder with Bacon
Thursday: Leftover Chowder
Friday: Deviled Eggs, Salads, Sliced Tomatoes, Pumpkin Chocolate Cake with Cream Cheese Icing
Saturday: Hosting Girls Night In: providing Mini Pigs-In-A-Blanket, Skyline Chili Dip with tortilla chips ( I usually add some onions to this), and Tortilla Roll-Ups;

Sunday: husband has hockey practice. Fake Bacon BLT for me with Oven Roasted Fries. Making Chicken Stock in the slow cooker today.

Day Care goodies:
Homemade chicken nuggets
(I plan on trying to add some spinach into the puree to sneak some veggies in)
Apple Oatmeal Muffins
Dairy-Free Waffles

Ale House Burgers and Cottage Pie With Leeks

Whole wheat bread rising in the pan.


An easy quick dinner. Falafel fixin's in the food processor.

The beginnings of Ale House Burgers, made using discounted extra lean beef that's been in the freezer for a month.

The edges are pinched up around the dollop of cheese.

Seasoned oven baked fries to go with the burgers. These were golden brown and fabulous.

The whole shebang.

Sauteed kale. It took 10 minutes to make.

This was a meal in itself. Sauteed kale, carmelized onion compote, and sweet potato cottage fries.
Sweet potatoes ready for the oven.

A bowl full of onions. And eyes full of tears.

Nicely carmelized onions.

Cottage Pie with Leeks. Sooooooo good!

The leeks are in the mashed potatoes, and it has a wee bit of cheese on top.


I added lots of peas to suit our tastes.

Wednesday: Avocado Tacos, Spanish Rice
Thursday: Scrambled Eggs with Avocado and Tomato, Toast of Homemade Bread
Friday: Bacon and Tomato Penne
Saturday: Red Wine Chicken Over Pasta, made by husband
Sunday: Homemade Calzones

Day Care treats:
Dairy-free Blueberry Muffins
Almond Poppy Seed Muffins
Fruit with Peanut Butter Fruit Dip (made with soy yogurt), for Valentine's party

Wednesday: leftover beans, Sauteed Kale

Friday: Corn Chowder , Onion, Cheese, and Poppy Seed quickbread
Saturday: Date night at Indian place with Restaurant.com coupon
Sunday: dinner for one- Tomato Soup and Salad
